Travelling to Northern & North-eastern Peru

Do you have suggestions about must-not-miss experiences in Iquitos, Chiclayo, Mancora or Tumbes, Peru?

After going to a wedding just outside Lima in mid-December (elementary-school chum marrying a Peruvian), my travelling companion and I are headed out for a Peruvian adventure of our own design. We're going to visit:

-Iquitos, (and have booked into a Jungle Lodge)
-Chiclayo,
-Mancora, (where we'll be over Christmas) &
-Tumbes

before we return in early January.

Do you have any suggestions of must-dos, must-sees or must-eats?

I'm a big natural history nut, so I am planning on seeing as many of the diverse habitats as possible. My travelling companion is interested in the experience of it all!

n.b.: we're vegetarians here at home, but flexible for cultural food experiences that include meat; that being said, I don't think we'll be frequenting the place that has cock fighting.

Bonus points if you can provide any general Peruvian travel hints and tips.
